- Edamame or green peas: 50g

- Onion (finely diced): ½
- Red bell pepper (finely diced): ½
- Ripe tomato (peeled and finely chopped): 1
- Garlic (minced): 3 cloves
- Saffron: 1 pinch (or substitute with 1 tsp Smoked Paprika)
- Dry white wine: 60ml
- Fish / Seafood stock (kept warm): approx. 600–700ml
- Fresh coriander (chopped): to taste
- Lemon: 1 (cut into wedges)
- Olive oil: 3 tbsp

Cooking Steps
Step 1: Sear Prawns & Extract Prawn Oil
Heat the wok over medium-high heat with 2 tbsp of olive oil. Add the prawns and sear for 1–2 minutes on each side until they turn bright red and golden. Transfer prawns to a plate and set aside.

Step 4: Add Warm Broth & Simmer
Pour in the warm seafood stock all at once. Gently level out the rice so it spreads evenly across the bottom of the wok. Season with a touch of salt and black pepper.
