Shaped like little ears, Orecchiette features a unique concave design perfect for catching and holding rich, savory sauces. Paired with homemade Italian meatballs that are crispy on the outside, tender and juicy on the inside, and a tangy basil tomato sauce, every bite offers a rich tapestry of textures. It is a quintessential classic of traditional Italian home cooking. By mastering two core techniques—searing meatballs to lock in juices and emulsifying pasta water to coat the pasta—you can effortlessly serve up restaurant-quality orecchiette at home!
Ingredients (Serves 3–4)
Italian Meatballs
- Minced beef or pork/beef blend: 300g
- Breadcrumbs: 3 tbsp
- Milk: 2 tbsp (for soaking breadcrumbs)
- Parmesan cheese (grated): 2 tbsp
- Egg: 1
- Garlic (minced): 1 clove
- Sea salt & black pepper: to taste
Orecchiette & Sauce
- Orecchiette pasta: 250g
- Canned diced tomatoes: 1 can (approx. 400g)
- Onion (finely diced): ½
- Garlic (minced): 2 cloves
- Tomato paste: 1 tbsp
- Dry white or red wine: 50ml
- Fresh basil or parsley (chopped): to taste
- Olive oil: 2 tbsp
Cooking Steps
Step 1: Prepare the Meatballs
Soak the breadcrumbs in milk and set aside. In a mixing bowl, combine the minced meat, soaked breadcrumbs, egg, grated Parmesan cheese, minced garlic, salt, and black pepper. Stir clockwise until the mixture becomes sticky and cohesive. Roll into ping-pong ball sized meatballs (approx. 10–12 pieces).
Step 2: Sear the Meatballs
Heat 1 tbsp of olive oil in a skillet over medium heat. Place the meatballs in the pan.
💡 Flavor Tip: Avoid moving the meatballs too frequently after placing them in the skillet. Let them sear undisturbed for 2–3 minutes until a rich golden-brown crust forms to lock in the meat juices. Flip and brown all sides, then transfer to a plate and set aside (meatballs should be about 80% cooked at this stage).
Step 3: Cook the Orecchiette
Bring a large pot of water to a boil, add 1 tsp of salt, and drop in the orecchiette. Cook for 1–2 minutes less than the package instructions to keep the pasta al dente. Drain, reserving about ½ cup of pasta water.
Step 4: Simmer the Tomato Sauce
In the same skillet used for the meatballs (retaining the flavorful pan drippings), adjust heat to medium. Add diced onion and minced garlic, sautéing until softened and translucent. Stir in the tomato paste and fry until fragrant, then pour in the white or red wine to deglaze, gently scraping up the caramelized bits (fond) from the pan bottom with a spatula. Pour in the canned diced tomatoes and bring to a simmer over medium-low heat.
Step 5: Combine Meatballs & Sauce
Return the seared meatballs to the tomato sauce. Cover with the lid and simmer on low heat for 6–8 minutes, allowing the meatballs to absorb the bright tomato acidity while infusing their savory juices into the sauce.
Step 6: Toss Pasta & Emulsify
Add the cooked orecchiette to the skillet and gently toss with the sauce and meatballs. If the sauce feels too dry, gradually add a splash of reserved pasta water. The starch will emulsify with the oil, helping the sauce cling evenly to the orecchiette.
Step 7: Garnish & Serve
Taste and adjust seasoning with salt and black pepper before turning off the heat. Garnish with chopped fresh parsley or basil. Serve directly from the stainless steel skillet for a rustic table setting, or plate individually!
Chef’s Recommendation: The Essential Helper for Pasta Sauces
ESSTEELE Per Vita Stainless Steel Skillet
When cooking Italian pasta sauces, acidic ingredients combined with high-heat searing place high demands on cookware quality. Made in Italy, the ESSTEELE Per Vita Stainless Steel Skillet shines in action with several key advantages:
- Crispy Outside, Tender Inside: The solid copper base conducts heat rapidly and evenly for superior thermal efficiency. When searing meatballs, the pan surface maintains uniform heat, quickly forming a beautiful golden crust without scorching. When simmering sauce, heat distributes evenly, preventing localized hot spots or scorching even during low-heat simmering.
- Premium 18/10 Stainless Steel – Acid-Resistant & Pure Flavor: Tomatoes are highly acidic, and long simmering in inferior metals can cause reactive metallic flavors. Crafted with premium 18/10 stainless steel, this skillet is highly stable and corrosion-resistant, preserving the natural tartness and freshness of tomatoes without releasing metallic off-flavors.
- Locks in Savory Juices for Elevated Flavor: Stainless steel cookware excels at high-heat searing, easily locking in juices while leaving delicious fond (pan drippings) at the bottom. When deglazing with wine, these fond bits dissolve smoothly into the sauce, taking flavor complexity to the next level.
